Blueberry Simple Syrup

This blueberry simple syrup is so easy to make! It's a combination of water, sugar, and fresh blueberries that can be used in various ways such as cocktails, mocktails, and desserts.

Ingredients

  • 1 Cup Water
  • 1 Cup Sugar
  • 2 Cups Blueberrries
  • Juice from half a lemon about 1 tablespoon.

Instructions

  • In a small pot on the stove, add the water and sugar, then warm over medium heat. Stir to help dissolve the sugar. 
  • Add in the blueberries and give a good mix. Bring to a boil and reduce down to a simmer. 
  • Simmer on the stove for about 20 minutes or until the berries are broken down and the liquid has reduced down. 
  • It should be a slightly thicker consistency. Thicker than water but not quite as thick as maple syrup. Add in the fresh lemon juice.
  • Remove from stove and allow to slightly cool. 
  • Take a fine mesh strainer over a bowl and strain the juices out. 
  • Gently move the berries around so all the liquid gets through. Do not toss the berries! Add them to a fresh lemonade or on top of pancakes. 
  • Store in a glass bottle or container for up to a month in the refrigerator.

Notes

Makes about 1.5 cups of blueberry simple syrup.
