Notes

This recipe can easily be doubled and we often do. When making fried rice, it's just as easy to make 8 cups vs 4 cups.
Tips for making Fried Rice
  • Use cold, day old rice
  • Make sure the griddle is hot
  • Use butter to cook. There is no substitute
  • Have everything prepped before cooking
  • Cook everything in batches
  • Avoid flipping too much, allow the rice to cook
Notes on the Rice
To achieve the best-fried rice it is crucial to use cooked rice that has been cooled and chilled overnight. If the rice is still warm it will have too much moisture which will prevent it from frying. So make sure you are using day old, cold rice.
If there is no time to chill the rice overnight, one way to chill it fast is to line a rimmed baking sheet with parchment paper and lay the rice out in a single layer. Place in the freezer for a few hours and then it will be cold enough to use.
