Watermelon Fruit Salad
Fresh watermelon salad is full of blueberries, lime, and fresh mint. This is a great way to elevate that bowl of freshly cut watermelon. Perfect for any BBQ, potluck, or picnic.

- 8 Cups Diced Watermelon Cut into 1" cubes, or desired size.
- Juice from 2 Limes
- ½ teaspoon Sea Salt
- ¼ Cup Fresh Mint Leaves Chopped fine
- 1 Cup Blueberries
Remove the rind from the watermelon and dice it into bite-sized pieces and place it in a large bowl. About 1" pieces
In a small bowl combine the lime juice and sea salt. Stir until the salt starts to dissolve.
Finely dice the mint leaves and add to the bowl of watermelon. Mix well.
Pour in the lime juice and mix until everything is evenly coated.
Dump in the blueberries and gently mix.
Chill in the fridge for 2 hours prior to serving.
When ready to serve taste and add in more lime and mint as needed.
Allow to Chill: While this fruit salad can be served right away it is even better when it can chill for 2 hours or more. The chill time allows the salt to intensify all the flavors. Just give a good mix before serving.
Ingredient Notes:
Fresh Lime and Mint: There are no substitutes. Use fresh of both of these.
Sea Salt: This is what brings the watermelon to life. The watermelon tastes more like watermelon and the mint and lime really come through.
Fresh Fruit: Blueberries go so well with this salad but other fruit like strawberries, mango, pineapple, grapes or kiwi can also be added.
