  • 8 Cups Diced Watermelon Cut into 1" cubes, or desired size.

  • ½ teaspoon Sea Salt
  • ¼ Cup Fresh Mint Leaves Chopped fine
  • 1 Cup Blueberries

Instructions

  • Remove the rind from the watermelon and dice it into bite-sized pieces and place it in a large bowl. About 1" pieces
  • In a small bowl combine the lime juice and sea salt. Stir until the salt starts to dissolve.
  • Finely dice the mint leaves and add to the bowl of watermelon. Mix well.
  • Pour in the lime juice and mix until everything is evenly coated.
  • Dump in the blueberries and gently mix.
  • Chill in the fridge for 2 hours prior to serving.
  • When ready to serve taste and add in more lime and mint as needed.

Notes

Allow to Chill: While this fruit salad can be served right away it is even better when it can chill for 2 hours or more. The chill time allows the salt to intensify all the flavors. Just give a good mix before serving.
Ingredient Notes:
Fresh Lime and Mint: There are no substitutes. Use fresh of both of these.
Sea Salt: This is what brings the watermelon to life. The watermelon tastes more like watermelon and the mint and lime really come through.
Fresh Fruit: Blueberries go so well with this salad but other fruit like strawberries, mango, pineapple, grapes or kiwi can also be added.
