Beet and Blueberry Smoothie

Healthy and filling beet and blueberry smoothie. Full of antioxidants, vitamins and minerals perfect to start your day or to fuel you through a good workout without sacrificing taste.

Ingredients

  • ½ Cup Almond Milk
  • ¼ Cup Vanilla Honey Greek Yogurt
  • 1 Tablespoon Honey
  • ½ Cup Frozen Blueberries
  • 1 Small Beet, or half a medium or large Diced into cubes
  • 1 Banana Can also be frozen

Instructions

  • Trim off stems, peel and wash the beet.
  • Dice beet into small cubes. *See notes about cooking
  • Add ingredients into blender in the order listed above.
  • Cover and run for 90 seconds, or until smooth. Add in more milk as needed.
  • Pour in a glass and enjoy.

Notes

How to prepare beets for a smoothie:
Raw: If you are using a high-power blender, such as a BlendTec or VitaMix, there is no need to do anything to the beets prior to making your smoothie. Just peel, wash, dice into small pieces, and throw them in.
Cooked: If you are using a lower-power blender try dicing them really small first. If they are still not blending well they may have to be cooked ahead of time and placed in the fridge to cool.
