Roasted Tomatillo Salsa

This roasted tomatillo green chili salsa is fresh, tangy, and has the perfect spice. Use as a dip for chips or make a batch of enchiladas verde. Roasting everything beforehand brings out the intense flavors of the tomatillos, jalapeños, and onions then blended up with some fresh cilantro and limes.

Ingredients – Tomatillos  – Jalapeno Peepers  – Yellow Onion – Garlic Cloves – Olive Oil – Kosher Salt – Cumin, Chili Powder, Cayenne – Cilantro  – Limes

Chop the tomatillos, onions, jalapeños and garlic.

Step 1: Chop

Drizzle with olive oil and toss.

Step 2: Drizzle

Add spices and salt. Toss to evenly coat.

Step 3: Spices

Line a baking sheet with foil and lay everything out in a single layer. Roast in oven.

Step 4: Roast

Place everything in a food processor and run until smooth.

Step 5: Puree

Add to a bowl and chill for 2 hours or up to overnight.

Step 6: Chill

Serve with chips, tacos or use as an enchilada sauce.

Step 7: Serve
