Tomato Soup with Chicken

– Full of chicken – Fresh veggies  – Creamy Tomato Stock – Fresh basil and parmesan

– Olive Oil & Butter – Chicken Breast  –  Onion – Carrots & Celery – Garlic  – All Purpose Flour – Chicken Stock – Water – Crushed Tomatoes  – Bay Leaves – Parsley & Oregano – Salt & Pepper – Shell Pasta – Fresh Basil 

What You Will Need

Using a large Dutch Oven cook the chicken in olive oil.


Remove to a plate when cooked.

At the same time boil the shell noodles in a separate pot just until al dente. They should have a slight crunch to them.


In the empty pot, add olive oil and butter. Sauté the onions until soft.


Add carrots and celery and continue to cook.


Add in garlic.

Stir in the flour until everything is coated then slowly add the chicken broth.


Add in the crushed tomatoes, seasonings, and chicken. Simmer for 12-15 minutes or until it has thickened.


Add in the cooked pasta, basil and heavy cream. Cook a few minutes until the soup is warm again.


Remove from the heat and stir in the fresh parmesan.


Serve warm with fresh bread!
