Crockpot White Chicken Chili

This slow cooker white chicken chili is full of perfectly shredded chicken, creamy stock and finished off with all the fresh toppings. Cook in a crockpot for an easy dinner the family will love.

For the Soup – Chicken Breast – Olive Oil – Salt and Pepper – Onion and Garlic – White Beans – Green Chilies – Frozen Corn – Oregano, Cumin, Paprika – Chicken Broth For the Roux – Butter – All Purpose Flour – Milk – Salt .

Brush chicken with olive oil and season with salt and pepper .

Add in the beans, frozen corn, diced onions, green chilis, garlic and all the spices.

Pour in the can of chicken stock. Cook on low for 6-8 hours

When chicken is done, shred with a fork, and return to crock pot.

Make a roux by melting butter in a small sauce pan.

Whisk in flour until it's full incorporated and starts to bubble.

Slowly whisk in milk and add salt. Simmer until it starts to thicken, whisking often.

It's done when it coats the back of a spoon.

Dump in crock pot, stir, and cook another 30 minutes.
