Step 1: Mix the Dough

Measure out 175 grams of sourdough starter

Pour in 360 grams of filtered water. Mix with a fork or dough whisk.

Add in 9 grams of salt and 550 grams of flour. Mix until combined.

Use hands to form a rough ball.

Rest for 3 hours and perform a stretch and fold every hour.

... and fold it over itself. Repeat all 4 sides. Rest 1 hour in between.

Step 3: Rest 8-12 Hours

Cover with plastic wrap and place in the refrigerator to proof for 8-12 hours.

Step 4: Shape

Remove from fridge and shape dough.

Step 5: Final Proof

Place in proofing basket and rest 2 hours.

Step 6: Preheat Dutch Oven

Preheat oven to 500 degrees Fahrenheit and place Dutch Oven inside to preheat.

Step 8: Score Loaf

Turn bread out onto parchment paper and score.

Step 9: Bake Bread

Lower oven to 450 and carefully place bread inside and put the lid on. Bake for 25 minutes.

Remove lid and bake another 25 minutes.

Done when golden brown and temp reaches 210 degrees.

Step 10: Allow to cool

Place on wire rack and allow to cool for 1 hour.
