Sourdough Discard Banana Bread

Sourdough discard banana bread is so incredibly soft and bursting with banana flavor. The discard gives this iconic bread the perfect rise and texture. Put this powerful ingredient to work by incorporating it into your next loaf of banana bread. Don't let your extra sourdough discard, or overripe bananas, go to waste anymore.

Cream together the butter and sugar

Step 1: 

Add in the sourdough starter and yogurt.

Step 2: 

Mix in the eggs and vanilla extract. Just until combined. Be careful not to overmix.

Step 3: 

Mash the bananas in a separate bowl with a fork or electric mixer.

Step 4: 

Fold mashed bananas into the wet ingredient mix.

Step 5: 

Whisk together the flour, salt, baking soda and cinnamon.

Step 6:

Fold the flour mix into the wet ingredients. Just until fully combine.

Step 7:

Dump into prepared baking pan.

Step 8:

With the spoon or spatula make sure the batter is evenly distributed across the pan.

Step 9:

Bake at 350 degrees for 55-60 minutes or until golden brown and when a toothpick is inserted into the middle comes out clean.  Rest in pan for 10 minutes.

Step 10:

Allow to cool, slice and serve with some butter.
