Measure ingredients in grams with a scale, not by cups.

Feed equal parts (by weight in grams) of starter, flour and water.

Use a glass jar or bowl with a light tea towel. A tight fitting lid will prevent it from rising.

Try different flours. If using bread switch to all purpose and vice versa.
