Sweet Potato and Black Bean Tacos


Sweet potato and black bean tacos are a great vegetarian option that still has the same classic taco flavors. Serve on a bed of cilantro lime rice or in a shell with your favorite fresh toppings and cheese.It's a quick, easy and healthy dinner option.


Ingredients:  –Olive Oil – Yellow Onion – Sweet Potatoes – Garlic Cloves – Chili Powder – Cumin – Paprika – Oregano – Salt & Pepper – Cayenne – ¾ Cup Water – Black Beans – Corn  – Lime Juice


In a large skillet warm olive oil over medium heat. Add onions and sauté until soft and translucent.

Step 1: Sauté Onion

Add sweet potatoes and cook until soft.

Step 2: Sweet Potatoes

Add in the spices, water, black beans and corn. Bring it all together and cook until water is cooked out.

Step 3: Add Everything 

Squeeze in some fresh lime juice and mix.

Step 4: Lime Juice
