Equipment

Ingredients

  • ½ Cup Unsalted Butter 1 Stick
  • 6-8 Garlic Cloves Pressed or minced
  • Pinch of Sea Salt Taste and add more as needed
  • 1 Tablespoon Fresh Lemon Juice

Optional

  • Fresh Herbs Dill, parsley, or chives.

Instructions

  • Dice the butter into cubes. Add to a small pot with the salt and start warming over medium low heat. Bring to a gentle simmer
Keep the burner low. If too warm, the butter will start to burn.
  • Add in the minced or pressed garlic and stir to combine.
  • Simmer just until the garlic starts to smell fragrant. That should take only 30 seconds to 1 minute.
  • Remove from heat and add in the lemon juice. Mix everything well and transfer to a small dish.

Optional

  • If you do not want the chunks of garlic, this sauce can be ran through a fine mesh strainer.
  • Add in fresh herbs if desired.

Notes

Ingredient Notes:
Unsalted Butter:  Unsalted butter gives you control over how much salt is used. If using salted, do not add more sea salt until you taste it.
Fresh Garlic: Fresh crab deserves fresh garlic. Mince really fine or use a garlic press. I prefer a garlic press because it really gets all that juice out of the cloves. Start with 6 and add more as needed.
Fresh Herbs (Optional): Fresh herbs and crab go really well together. Some great additions are parsley, chives or dill. Just add after removing the pot from the heat.
Cooking Notes:
Butter: Cut the butter into cubes and cook on a low heat. This will prevent it from burning.
Garlic: Cook just until it starts to get fragrant. If cooked too long it can become bitter.
