Cinnamon simple syrup is a flavorful syrup made by combining cinnamon sticks, sugar and water. It can be used as a sweetener and flavoring in different drinks and desserts.
Start off by breaking apart the cinnamon sticks into a few pieces.
Fill a small pot with the water and sugar. Start to warm over medium heat until the sugar begins to dissolve. Mix well.
Add in the cinnamon sticks and bring to a boil. Reduce down to a simmer and allow to cook for 20 minutes or until the syrup is a brown color and smells like cinnamon.
Remove from the heat and allow to slightly cool.
Place a fine mesh strainer over a bowl and run the liquid through, catching all the bits of cinnamon in the strainer.
Toss the cinnamon sticks and save the syrup in a glass bottle or container.
