Ingredients
This syrup calls for just 3 simple ingredients. Water, sugar and cinnamon sticks.
Cinnamon sticks: They can be left whole or broken up into pieces.

How to Make
Start off by breaking apart the cinnamon sticks into a few pieces.
Fill a small pot with the water and sugar. Start to warm over medium heat until the sugar begins to dissolve. Mix well.
Add in the cinnamon sticks and bring to a boil.
Reduce down to a simmer and allow to cook for 20 minutes or until the syrup is a brown color and smells like cinnamon.
Remove from the heat and allow to slightly cool.
Place a fine mesh strainer over a bowl and run the liquid through, catching all the bits of cinnamon in the strainer.
Toss the cinnamon sticks.
Storage
Keep this syrup in a glass jar or bottle in the refrigerator for up to a month.
It can also be frozen. Freeze in ice cube trays and then store in a freezer safe container.

- Small Pot: Use a 1.5-2 quart pot.
- Fine Mesh Strainer: To strain the syrup and catch all the pieces of cinnamon stick.
- Glass Bottle: These flip lock bottles are great for storing and serving simple syrups.
