Ingredients
Fresh Strawberries: While frozen can be used, fresh is going to give you the most flavor. And the fresher they are the better they will be!
Lemon: A little bit of lemon juice goes a long way. This helps balance out the sweetness from the sugar and strawberries.
How to Make
Start off by hulling out the top of the strawberry and dicing into small pieces. I like to use the strawberry hauler below. It's a great way to remove the stem without having to cut off the top of the strawberry.
In a small pot on the stove add the water and sugar, then warm over medium heat.
Add in the fresh strawberries and bring to a boil.
Reduce to a simmer and allow to cook for about 20-25 minutes or until the liquid has reduced down and has a thick consistency.
Remove from heat and allow to slightly cool.
Run through a fine mesh strainer to collect all the pieces of strawberry.
Gently move the strawberries around the strainer so the liquid can get through. Be careful not to push too hard or bits of strawberry will make it through.
Do not toss the strawberries!! They go so great in a fresh lemonade, or just simply enjoy them.
Storage
This simple syrup will keep in a glass jar, bottle or container in the refrigerator for up to a month.
This sauce can also be frozen. Freeze using ice cube trays and then keep the frozen cubes in a freezer safe container.
Equipment
Strawberry Hauler: Using this strawberry hauler is a great way to remove the stem, leaving as much strawberry behind as possible. If you do not have one, it is definitely a great tool to have on hand.

Fine Mesh Strainer: To strain out all the cooked strawberries.

Brandy
Why do you use the lemon? Do you think I could use this to make homemade jello and add gelatin?
Kristin
The lemon helps intensify the flavors of the fruit. I would think so yes!
