    Strawberry Rhubarb Smoothie

    This strawberry rhubarb smoothie will surprise and delight you. The tartness of rhubarb, paired with the sweetness of strawberries, honey and yogurt gives you a drinkable, healthy version of a strawberry rhubarb crumble.

    This smoothie is an inspiration straight from my garden. Because lets get real, is there a more classic garden combination than strawberry and rhubarb?

    Due to the extreme tartness of rhubarb it is often added to desserts or jams that are packed full of sugar to help balance it out. Even as a kid I remember the only way to eat it raw, was dipping it straight into granulated sugar.

    With this smoothie, that is not the case. Using honey as a more natural sweetener, yogurt, oat milk and strawberries will all help balance it out without jam packing it full of sugar.

    This smoothie will make you want to plant more rhubarb just to make it over and over again.

    Rhubarb surprisingly has so many health benefits from fighting inflammation, lowering cholesterol, and helping with digestion. Taste of Home has a great article on all the surprising benefits of rhubarb. For these reasons it's a great garden item to add to your morning smoothie.

    Ingredients

    For this recipe it calls for strawberries and rhubarb. Make sure one of these items, or both, are frozen. They don't need to be, but it helps make a colder, creamier smoothie.

    Ingredients needed to make a strawberry rhubarb smoothie:

    • Oat Milk - Very important to achieve the right flavor, but can be easily substituted for your preferred milk.
    • Vanilla Whole Milk Yogurt - Can use greek vanilla yogurt but will be more tart.
    • Honey
    • Cinnamon
    • Rhubarb (Frozen if possible)
    • Strawberries (Frozen if possible)

    If you want your smoothie to turn out like a strawberry rhubarb crumble, don't skip on the oat milk or vanilla yogurt. These two things really help give it the classic flavor and also help balance out the tartness of the rhubarb.

    I have made it so many different ways and trust me, this combo is the best.

    Instructions

    Smoothies are so simple to make and are perfect for on the go breakfast. Just dump all the ingredients in and blend.

    Add all the ingredients in the blender starting with the oat milk, honey, cinnamon and then add in the frozen strawberries and rhubarb.

    Cover and blend for 90 seconds (or smoothie setting) until smooth and creamy. Pour in a glass and enjoy.

    Substitutions

    • Milk - Oat milk is critical to achieve the right taste but it can easily be substituted with coconut, almond or regular milk.
    • Greek Yogurt - Vanilla Greek Yogurt can be used in place of regular yogurt but the taste will be a bit more tart. The regular yogurt helps balance out the tartness of the rhubarb.

    Variations

    • Milk Shake - This easily could be made into a milkshake. Just add in a scoop of vanilla ice cream instead of the yogurt.
    • Protein Shake - Add in a scoop of your favorite vanilla protein to give it a boost.

    Equipment

    High power blender: My blender of choice is a BlendTec but any high powered blender will work. If not using a high power blender, consider using chopped up frozen strawberries, or fresh instead. Any high power blender should have no trouble blending both the strawberries or rhubarb.

    Glasses: These are my favorite glasses for smoothies.

    Metal straws: Reusable straws that are perfect for smoothies.

    Storage

    This smoothie is not great left over. It can be left in the fridge for a few hours but should be consumed after blending.

    Freezing Smoothies:

    My kids do not like smoothies, but you know what they do like? Popsicles! My tip is to turn this smoothie into a popsicle that will make a great summer, hot day treat.

    It can be poured into popsicle molds or into these fun sleeves to make your own, healthy otter pops.

    Ingredients
      

    • 4 Ounces Oat Milk
    • ¼ Cup Vanilla Whole Milk Yogurt
    • ½ Teaspoon Cinnamon
    • 1 Tablespoon Honey
    • 4-5 Large Strawberries about 5oz Frozen if possible
    • ½ Cup Diced Rhubarb Frozen if possible

    Optional

    • 1 Scoop Vanilla Protein Powder

    Instructions
     

    • Add all ingredients into the jar of a blender in the order they are listed.
    • Place the lid on and run for 60-90 seconds (or smoothie setting) until smooth and creamy.
    • Pour in a glass and enjoy!

    Notes
