If there is one fruit that signals summer is here (or very close) is watermelon. You can find a bowl of watermelon at just about any BBQ, potluck, or picnic. It's refreshing, filling and just about everyone loves this dark red, juicy fruit.
While watermelon is perfect on its own, sometimes it can be fun to change things up.
This watermelon salad is full of fresh flavors and when sea salt is added just makes the entire thing come to life.
The combination of mint and limes intensifies and complements the watermelon so perfectly! It is just so refreshing and full of fresh flavors.

Ingredients
Fresh Lime and Mint: There are no substitutes. Use fresh of both of these.
Sea Salt: This is what brings the salad to life. The watermelon tastes more like watermelon and the mint and lime really come through. Allow the dish to chill so the salt can do its thing.
Fresh Fruit: Blueberries go so well with this salad but other fruit like strawberries, mango, pineapple, grapes or kiwi.
Instructions
- Remove the rind from the watermelon and dice it into bite-sized pieces and place it in a large bowl. About 1" pieces
- In a small bowl combine the lime juice and sea salt. Stir until the salt starts to dissolve.
3. Dice mint leaves into very small pieces.
4. In a large bowl add watermelon, mint, and lime juice.
5. Mix until everything is completely combined.
6. Gently fold in the blueberries.
7. Place in refrigerator to chill for 2 hours prior to serving.
When ready to serve give a good stir, taste, and add more lime, salt, or mint as needed.
Variations
Add feta: Feta cheese goes so well with the watermelon and mint. It is a great addition to give it a little more savory feel.
Add Other Fruit: Add in other fresh fruits you have laying around. Strawberries, pineapple, mango, or other melons would be great options.

Citrus Press: This is one of the best and easiest ways to add fresh citrus right to any dish. It also helps catch the seeds so they don't fall into whatever you making.

Ingredients
- 8 Cups Diced Watermelon Cut into 1" cubes, or desired size.
- Juice from 2 Limes
- ½ teaspoon Sea Salt
- ¼ Cup Fresh Mint Leaves Chopped fine
- 1 Cup Blueberries
