🥕Ingredients
Andouille Sausage: Using a pre-cooked sausage like andouille cuts out so much cooking time! Gourd sausage can also be used. Just cook first, remove from the pot and then start the soup. Add with the tortellini.
Vegetable Broth: Can be substituted for chicken broth.
Tortellini: Use your favorite pre-made tortellini. A cheese stuffed or spinach stuffed works best in this recipe.
Water: Add in as needed to make this soup your desired consistency.

🥘How to Make
Step 1: Start off by warming up a Dutch Oven on the stove over medium heat. Add in the olive oil.
Step 2: Sauté the onions until soft and translucent. About 5 minutes.
💡Pro Tip: Add in the salt now! This will help draw all the flavors out of the onions, celery and carrots.
Step 3: Add in the carrots and celery and continue to sauté until soft. (Image 1).
Step 4: Add in the garlic and cook for 30 seconds.
Step 5: Add in the sausage and seasonings and mix until everything is coated. (Image 2).
Step 6: Add in the broth, crushed tomatoes, tortellini and bring to a light boil. Reduce to a simmer and cook until the tortellini is done according to the package directions. (Image 3). Add in any water as needed until you reached your desired consistency.
Step 7: Add in the spinach and cook until it is wilted. (Step 4). It might seem like a lot but the spinach will shrink down.
Serve warm!

This soup cannot be frozen with the tortellini. Freezing and thawing will cause the noodle to break down. It can be frozen without it and then added while reheating.

- 2-3 Carrots - Diced
- 4-5 Celery Stalks - Diced
- 2-3 Garlic Cloves - Minced or pressed
- 1 pound Andouille Sausage - cut into ¼" slices
- 1 teaspoon Kosher Salt
- ½ teaspoon Black Pepper
- 1 teaspoon Dried Parsley
- 1 teaspoon Dried Oregano
- 4 Cups Vegetable Broth - or chicken broth
- 28 ounce Canned crushed tomatoes
- 18 ounce Pack of pre-made Tortellini
- 5 ounces Baby Spinach - Lightly chopped
- Water - as needed to thin out.
