Our favorite way to make fried rice is on a Blackstone or any other flat top griddle.
The Blackstone makes it super simple and we can make 4 times the amount than we can in a pan or wok. Because let's be honest, the best part of good take-out is the leftovers.

Chicken: This particular recipe is for chicken fried rice, but the chicken can easily be substituted for shrimp or another protein of your choice. We even make a turkey fried rice after Thanksgiving.
Butter: The key to a good fried rice is butter. While other oils can be used in its place, butter really does make a difference.
Oyster Sauce: This ingredient is optional and can be left out. While it is typically used in fried rice, it will still turn out great without it.
Rice: The best rice option will be a long grain white rice like Jasmine or Basmati Rice. Make sure it is made the day before and then chilled overnight.
If you are short on time, cook the rice then line a baking sheet with parchment, spread the rice out and freeze until it is chilled.
Add different veggies: Getting creative and adding different veggies is a fun way to mix up this fried rice recipe. Consider things like red bell peppers or green beans.

Here are 6 tips to make your Blackstone fried rice even better.
- Cold Rice: To achieve the best-fried rice it is crucial to use cooked rice that has been cooled and chilled overnight. If the rice is still warm, it will have too much moisture which will prevent it from frying.
- Divide the grill in two: Keep one side of the grill hot for frying and sautéing. Leave the other side cooler for those things that are finished cooking.
- Pre Heat the Griddle: Allow the cooktop to come to temperature before cooking.
- Butter: Butter is going to give you the best flavor in the rice. Oil can be used but it just will not turn out the same.
- Prep everything before cooking: This recipe cooks really fast. Have everything ready to go before you even start cooking.
- Avoid over flipping: Give the rice time to cook. If it is constantly flipped, it will never get nice and toasted.
🔪How to Make
Step 1: Prepare all the ingredients by dicing the chicken, carrots, scrambling the eggs, and mixing up the soy sauce. This is the part that takes the most time. (Image 1).
💡Top Tip: Warm up one side of the griddle to medium high heat and one side of the grill on a low heat. When something is done cooking, move it to the cooler side to keep warm.
Step 2: Start off my melting a tablespoon of butter. (Image 2).
Step 3: Add chicken (or steak) and spread out to a single layer on the grill. Season with salt and pepper. If you are making shrimp fried rice, wait to cook the shrimp until the very end. (Image 3).
Step 4: Cook the chicken until it's cooked about half way through. Flip and cook the other side until it is completely cooked all the way through and no longer pink. (Image 4).
Step 5: Once the chicken is cooked all the way through, move it over to the low heat side or remove from the griddle. (Image 5).
💡Safety tip: Once the chicken is cooked switch to a different spatula or wash the one you are using. This will prevent contamination from the raw chicken.
On a now empty griddle, start frying the veggies.
Step 6: Add another tablespoon of butter then add the carrots. Sprinkle with salt and pepper and sauté carrots until soft and tender. (Image 6).
Step 7: Add the frozen corn and peas. Cook until tender. (Image 7).
Step 8: While the veggies are sautéing, add another 1 tablespoon of butter and melt. Dump the scrambled egg on the butter and start to cook. (Image 8)
Once cooked halfway through, take the spatula and start to break up the eggs and cook all the way through.
Step 9: When the eggs are done cooking and chopped up, bring together the chicken, eggs, and veggies. (Image 9).
Step 10: Dump on the rice, breaking the clumps up and mixing everything together well. Spread out in an even layer. (Image 10).
Step 11: Add half the soy sauce mix and toss everything to evenly coat. Taste and add more as needed. (Image 10).
Step 12: Add the bbq pork and green onion. ( If you are using shrimp, this is the time to cook it. ) Mix everything together and spread out into a thin layer. Fry until the rice starts to get nice and toasted.
💡Top Tip: Be careful not to over flip. Allow the rice to sit and cook. If it is constantly turned the rice will never get that toasted texture.
After a few minutes, flip the rice to cook the other side. Continue this process until it reaches your desired texture.
Toss everything together one final time.

Blackstone Fried Rice
Ingredients
- 1 Pound Chicken Breast - Diced into bite sized pieces.
- 3 Tablespoons Butter - Divided into 1 tablespoon portions.
- ½ Cup Diced Carrots - About 1-2 large carrots.
- ½ Cup Frozen Corn
- ½ Cup Frozen Peas
- 2 Eggs - Scrambled
- 4 Cup Cooled Jasmine or Basmati Rice - *See Notes
- 4 oz Korean BBQ Pork - Optional
- Diced Green Onion
Soy Sauce Mix
- 2-3 Tablespoons Soy Sauce
- 1 Garlic Cloves - Pressed or Minced
- ½ teaspoon Sesame Seed Oil
- 1 teaspoon Oyster Sauce - Optional

Instructions
- Cook rice and allow to cool over night. See notes for more tips.
- Dice all the ingredients, scramble the eggs, and make the soy sauce mix. Have everything ready to go.
- Warm-up one side of the griddle to medium high heat and one burner of the grill on a low heat.
- Add 1 tablespoon of the butter and melt.
- Add chicken in a single layer and season with salt and pepper.
- Grill until cooked all the way through, flipping halfway through cooking.
- When chicken is no longer pink, move to the cool side of the grill or set aside on a plate for later.
- Add 1 tablespoon of butter and melt.
- Add diced carrots and season with salt and pepper.
- Sauté carrots until soft.
- Add frozen peas and corn and cook until warm.
- Next to the cooking veggies add 1 tablespoon of butter and melt.
- Add the scrambled eggs and allow to cook.
- Once cooked about half way, use the spatula to mix and break the eggs up.
- Once veggies and eggs are cooked, bring everything together and mix well.
- Add in the rice and use the spatula to break up the clumps and mix everything up.
- Spread out in a thin layer.
- Drizzle on the soy sauce mix and toss to coat all the rice. Start off with half the soy sauce, taste and add more to your liking.
- Add in the pork and green onions and toss everything together.
- Spread rice in a single layer and allow to fry for a few minutes until the rice starts to turn brown.
- Flip and cook the other side.
- Continue until the rice has reached your desired consistency.
- Taste and add more soy sauce as needed.
- Serve with some homemade yum yum sauce and enjoy!
